Holiday Roasted Carrots with Honey-Balsamic Glaze & Umami Spice

Ingredients

2 lbs rainbow carrots (or regular carrots, peeled)

2 Tbsp flavored olive oil (suggestion: Blood Orange or Rosemary EVOO)

1 Tbsp honey
-
1 ½ Tbsp flavored balsamic vinegar (suggestion: Fig, Pomegranate, or Cranberry-Pear)

2 tsp Umami Spice Blend

Fresh parsley or thyme (for garnish, optional)
Directions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper
Toss carrots with olive oil and 1 tsp of the umami spice. Spread evenly on the pan.
Roast for 20–25 minutes, flipping halfway, until golden and tender.
While the carrots roast, make the glaze: In a small bowl, whisk honey and balsamic vinegar until smooth.
Drizzle the glaze over the carrots during the last 5 minutes of roasting. Sprinkle with the remaining umami spice.
Garnish and serve warm with fresh parsley or thyme.
