Green Olive Company sells only “early harvest” extra virgin olive oils (EVOOs), ensuring superior taste and more significant health benefits. Being made from the first press of olives, while they are just ripening and still green, preserves the naturally occurring polyphenols found in olive oil. These organic compounds have demonstrated numerous health-promoting properties, with studies linked to anti-inflammatory, anti-hypertensive, anti-arthritic, cardio-protective, and anti-carcinogen activities. Like many fruits, olives must be harvested during certain times of the year. Because the Northern and Southern Hemispheres always experience opposite seasons, we rotate our olive oil products every six months depending on which hemisphere is pressing olives to ensure absolute freshness.
