Harvest salad ingredients
Ingredients:
Roasted Beets and Squash:
- 3 cups beets, scrubbed and cubed
- (no need to peel)
- 3 cups butternut squash, in cubes
- or bite-sized chunks
- 4 tablespoons Green Olive
- Company Extra Virgin Olive Oil
- Salt and pepper to taste
Balsamic Maple Dressing:
- 1/4 cup Green Olive Company Maple Dark Balsamic Vinegar
- 1/4 cup Green Olive Company Extra Virgin Olive Oil
- 2 tablespoons Green Olive Company Garlic Infused Olive Oil
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Salad:
- 1 (6 oz) package of mixed greens
- 1/2 cup of crumbled feta cheese
- 1 cup pomegranate seeds
- 1/2 cup pan-toasted pumpkin seed
