Harvest salad ingredients

Ingredients:

Roasted Beets and Squash:

  • 3 cups beets, scrubbed and cubed
  • (no need to peel)
  • 3 cups butternut squash, in cubes
  • or bite-sized chunks
  • 4 tablespoons Green Olive
  • Company Extra Virgin Olive Oil
  • Salt and pepper to taste

Balsamic Maple Dressing:

  • 1/4 cup Green Olive Company Maple Dark Balsamic Vinegar
  • 1/4 cup Green Olive Company Extra Virgin Olive Oil
  • 2 tablespoons Green Olive Company Garlic Infused Olive Oil
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Salad:

  • 1 (6 oz) package of mixed greens
  • 1/2 cup of crumbled feta cheese
  • 1 cup pomegranate seeds
  • 1/2 cup pan-toasted pumpkin seed
