A rustic, no-knead bread with deep umami flavors and a hint of sweetness.

Ingredients
- 3 cups (375g) all-purpose flour
- 1½ tsp baking soda
- 1 tsp salt
- 2 Tbsp Umami Spice Blend
- 1¼ cups (300ml) buttermilk (or milk + 1 Tbsp lemon juice, let sit 5 min)
- 60ml flavored olive oil
- 2 Tbsp local honey
- 2 Tbsp balsamic vinegar
For brushing:
- 2-3 Tbsp flavored olive oil
- Extra pinch of Umami Spice Blend
Directions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Mix dry ingredients: In a large bowl, whisk together flour, baking soda, salt, and umami spice blend.
Combine wet ingredients: In a separate bowl, whisk buttermilk, olive oil, honey, and balsamic vinegar until honey dissolves.Make the dough: Pour wet ingredients into dry and stir with a wooden spoon just until combined (don't overmix—dough will be sticky and shaggy).
Shape: Turn dough onto a floured surface, shape into a round loaf (about 7 inches across), and place on prepared baking sheet. Cut a deep X across the top.Bake: 30-35 minutes until golden brown and sounds hollow when tapped. Internal temp should reach 200°F.
Finish: Brush warm bread with olive oil and sprinkle with extra umami spice.
Cool for 10 minutes before slicing.
