Ingredients
500g quality pork sausage meat
2 sheets ready-rolled puff pastry
1 small red onion, finely diced
2 cloves garlic, minced
1/4 cup breadcrumbs
1 teaspoon fresh thyme leaves
Salt and black pepper to taste
2 tablespoons Tuscan Herb Infused Olive Oil
3 tablespoons Black Mission Fig Dark Balsamic Vinegar
1 egg, beaten (for egg wash)
2 tablespoons Sesame seeds (optional, for topping)

Heat 1 tablespoon Tuscan Herb Oil in a pan over medium heat. Sauté onion until softened, about 4 minutes. Add garlic and cook 1 minute more. Remove from heat and cool 10 minutes.

In large bowl, combine sausage meat, cooled onion mixture, breadcrumbs, thyme, 2 tablespoons balsamic vinegar, salt, and pepper. Mix well with your hands. Divide into 4 equal portions.

Preheat oven to 200°C (400°F). Line baking tray with parchment. Cut each pastry sheet in half lengthwise (4 strips total). Shape one portion of sausage into a log down center of each pastry strip. Brush one long edge with beaten egg. Roll pastry over filling and press to seal. Cut each log into 6-8 pieces.

Place rolls seam-side down on prepared tray, spacing 1 inch apart. Brush with 1 tablespoon Tuscan Herb Oil, then with beaten egg. Sprinkle with sesame seeds if using. Cut 2 small slits in each roll. Bake 25-30 minutes until golden and puffed.

Cool 5 minutes, then drizzle with remaining 1 tablespoon balsamic vinegar. Serve warm or at room temperature.
