Pairs perfectly with our Basil EVOO for a fresh twist on a summer salad.

Ingredients
1/2 cup Pine Nuts
1/2 cup EVOO or Basil Olive Oil
2 Shallots, finely chopped
2 Tbsp Grapefruit White Balsamic Vinegar
2 Tbsp chopped fresh Basil
8 cups Butter Lettuce or Spinach
1 cup Cherry Tomatoes, halved
1/2 medium Cucumber, thinly sliced
4oz crumbled Feta Cheese
1/2lb Smoke Turkey Breast or Other Protein Source
Directions
In a medium skillet, combine pine nuts and 1 tablespoon of the oil. Heat over medium heat for 3 to 5 minutes or until toasted, stirring occasionally. Season with kosher salt.
For the dressing, in a small bowl combine shallots, vinegar, 1/2 teaspoon of kosher salt and 1/4 teaspoon ground black pepper. Whisk in remaining oil.
In a large salad bowl toss together lettuce, basil, and cucumber. Add dressing; toss to combine. Add cheese; toss gently to combine. Top with pine nuts and turkey, if desired.
