Create an easy and healthy dessert that will please the entire family!
Cranberry Pear and Persian Lime Fruit Salad
My daughters and I had a blast developing this recipe in our kitchen. Adding the whipped cream on the top of the fruit makes if feel like a special dessert!
2 Cups of Assorted Fresh Fruit (strawberries-sliced, blueberries, raspberries, blackberries, and pineapples.)
2 Tbsp. Green Olive Company Cranberry Pear White Balsamic Vinegar
4 Tbsp. Green Olive Company Persian Lime Olive Oil
1 Tbsp. Powdered Sugar
1 Cup of Heavy Whipping Cream
Combine fruit into a large bowl. Add 2 Tbsp of Cranberry Pear vinegar and 2 Tbsp of the Persian Lime Olive Oil and mix well.
Let fruit chill in fridge while you make whipped cream.
For the whipped topping:
Combine heavy whipping cream, 1 tbsp. of powdered sugar with a mixer. When the cream starts to form stiff peaks, switch the mixer to low and slowly drizzle in the olive oil. Mix just until the olive oil is incorporated. Do not over mix.
To serve, portion out berries and top with fresh whipped cream and garnish with mint. Store in the fridge until ready to use
Add some chocolate shavings to the top for some extra garnish pizzaz.
